A while back I was introduced to the wonders of the Sweet Potato. You can make so many delicious dishes, from “french fries to a baked potato”. Having a sweet potato for lunch is a very good idea. It fills you up and keep you full longer, and not to mention that taste amazing.
Always looking for a way to improve my eating habits, here is one of my favorite combinations for lunch.
Ingredients
- One medium sweet potato
- 4 oz of chicken breast
- 1 cup of salad (the ones in a bag or the fresh lettuce)
- 1 tbs of olive oil
- Juice of one (1) lime
- 1.5 tbs of balsamic vinegar
- Salt and pepper to taste
Directions
Season and cook the chicken breast for 10 minutes (or until cook completly). In a steaming bag (I use Glad) put the sweet potato, season with juice from a half a lime, salt and pepper. In a microwave cook the sweet potato for 8. In a separate bowl, add the salad. Then combine the olive oil, balsamic vinegar and the lime juce and pour to the salad and toss it.
Once the sweet potato is cooked sliced and serve on a plate with the chicken and the salad. Sit and enjoy!
You see, nothing out of the extraordinary, but very, very delicious!!
