Weight Watchers have taught me that I could eat what I want in moderation and sometimes tweaking the dishes. That’s what I did with the tacos and I would love to share this with you. I hope you enjoy them as much as I do.
No Guilt Turkey Tacos
Ingredients
- 1 1/3 pounds of ground turkey breast
- 1 large green pepper
- 2 portabella mushrooms
- 2 tbs of chipotle or chipotle paste
- Salt and pepper to taste
- 10 Ortega taco shell (or another brand – just watch the calories) or corn tortillas
- 1/4 fat-free re-fried beans
- 1 cup of shredded low-fat cheese
- 1/4 fat-free sour cream
- 1/2 salsa
- 1 tbs of olive oil
- 1 cup of lettuce
Directions
Cut in squares the green pepper and the portabella mushroom. In a frying pan, pour a tbs of olive oil and spread it. When hot, add the green pepper, the portabella mushroom and 1 tbs of chipotle or chipotle paste. Let it cook for 5 minutes. Take it out of the flame and let it rest.
In the meantime, season the turkey to taste and add the remaining chipotle paste to it for a spicy kick. In the same pan you cooked the pepper and the portabella, add the ground turkey breast and let it cook for approximately 10 minutes or when it’s completely white.
Once the turkey is ready, add the peppers and the portabella mushroom and mix well. Let it cook for 3 to 4 minutes. Take it out of the flame and let it rest.
While the turkey mix is resting, in a microwave heat up the taco shells. Serve the turkey mix in a deep plate, the taco shells in a tray or a normal plate. The salsa, sour cream, cheese, re-fried beans and the lettuce serve them in individual plates for the guests to serve themselves.
Complete this meal with a cold lemonade or a light beer.
